Tom Kha Gai (Chicken Coconut Soup)

  1. In a soup pot, sauté curry paste until fragrant. Add broth, garlic,
    and chicken and bring to a gentle boil over medium-high heat. Let simmer for 3 minutes over low heat.
  2. Add in coconut milk, mushrooms, and other veggies. Turn heat up to medium
    to bring back to a simmer. Simmer for about 8-10
    minutes over low heat, stirring occasionally.
  3. Stir and add sugar and fish sauce. Bring to a
    gentle boil again over medium heat. Turn heat to low and let simmer for another 5-8 minutes until chicken is cooked.
  4. Squeeze in lime juice and adjust seasonings to taste (fish sauce, sugar, lime juice). Serve garnished with fresh cilantro.
