Sticky Rice with Curry Mango

Ingredients
- 1/2 cup glutinous rice, cooked
- 1 can coconut milk
- 1/2 cup sugar
- 4 ripe mangoes
- Coconut Custard
- 1 can coconut milk
- 1/4 cup sugar
- 1 tbsp rice flour
- salt to taste
- curry powder to taste
Instructions
- Boil the coconut milk with sugar and remove from heat. Let rest for 10 minutes.
- Sieve and combine the coconut milk mixture with the cooked rice and mix well. Cover with plastic film and let the rice rest and absorb the milk for 2 hours.
- Add coconut milk, sugar, and salt in a pot. Gently boil until sugar is dissolved. Mix rice flour with bit of water, dissolve and add into coconut milk. Gently cook until it thickens
slightly, remove from heat. - Slice mangoes, sprinkle with curry powder. Serve with sticky rice,
accompanied by coconut custard.
