Red Curry & Vegetables

  1. Sauté onion in oil until almost transparent. Add red curry paste and sauté until fragrant.
  2. Slowly add coconut milk and protein if desired.
  3. Add remaining ingredients and simmer for 15 minutes.
  4. Add vegetables and simmer until done, about 2 minutes.
  5. Serve over fragrant rice.

*Note: This dish can be made with or without your choice of protein.
