Red Curry & Vegetables

Serves: 4 servings
- Sauté onion in oil until almost transparent. Add red curry paste and sauté until fragrant.
- Slowly add coconut milk and protein if desired.
- Add remaining ingredients and simmer for 15 minutes.
- Add vegetables and simmer until done, about 2 minutes.
- Serve over fragrant rice.
*Note: This dish can be made with or without your choice of protein.
