Pork Dumplings

Ingredients
- 6 oz napa cabbage, finely chopped
- 2 tsp ginger, finely chopped
- 1 tbsp Shaoxing rice wine
- 1 1/2 tbsp soy sauce
- 1 tsp salt
- 1/2 tsp ground black pepper
- 3 tbsp green onions, chopped
- 2 tsp sesame oil
- 1 tsp sugar
- dumpling wrappers
- 2 tbsp cold chicken stock
Instructions
- Combine ingredients until well mixed.
- Place rounded tablespoon in middle of wrapper. Fold and seal with water.
- Bring a large pot of water to a boil. Drop half of the dumplings into the water and stir once so they don’t stick together. When the water boils again, add 1 cup of cold water to the pot. Then when it boils again, add 3 cups of cold water. The third time the water boils, the dumplings are cooked. Remove them with a slotted spoon and repeat with the remaining dumplings.
- Serve immediately with small bowls of dipping sauce.
