Serves: 4 servings
- Place oil in hot wok or pan. Add garlic and scallions. Saute until fragrant.
- Add egg and tofu (or protein of choice) and cook until almost done.
- Add in noodles, vinegar, ketchup, fish sauce, sugar, and paprika.
- Add bean sprouts and stir. Cook until noodles are soft.
- Sprinkle peanuts in noodles. Garnish with lime wedges.
