Golden Spring Rolls

Ingredients
- 4 oz rehydrated mung bean noodle
- 1 cup shredded cabbage
- 1/2 shredded carrots
- 1/4 cup sliced green onion
- spring roll wrappers
- 1 egg, beaten
- salt and pepper to taste
- oil for frying
Instructions
- Soak mung bean noodles in hot water until soft. Drain and rinse under cold water.
- Prepare all ingredients and cut all vegetables to size. Mix and season filling.
- Roll filling into wrapper and seal closed with egg.
- Fry in 350° oil until golden.
