Chicken Satay with Curry Peanut Sauce

  1. Cut chicken breast into ½ inch pieces.
  2. Marinade in coconut milk, fish sauce, and curry
    powder for 3 hours. 
  3. Thread chicken onto skewers and season.
  4. Sauté or grill skewers until done.
  5. Combine all ingredients for sauce. Bring to a boil. Cook and stir until sauce is well blended.
  6. Serve alongside with rice and extra curry sauce.

*Note: Soak skewers for 1 hour prior to use.
