Chicken Satay with Curry Peanut Sauce

Ingredients
- 1 1/2 chicken breast
- curry powder
- 1 can coconut milk
- 2 tbsp fish sauce
- bamboo skewers, soaked
- Sauce
- 1 can coconut milk
- 1 tbsp curry paste of choice
- 3/4 cup peanut butter
- 1/4 cup brown sugar
- 2 tbsp fish sauce
Instructions
- Cut chicken breast into ½ inch pieces.
- Marinade in coconut milk, fish sauce, and curry
powder for 3 hours. - Thread chicken onto skewers and season.
- Sauté or grill skewers until done.
- Combine all ingredients for sauce. Bring to a boil. Cook and stir until sauce is well blended.
- Serve alongside with rice and extra curry sauce.
*Note: Soak skewers for 1 hour prior to use.
