Basil Lettuce Wraps

Ingredients
- oil, for stir frying
- 1/2 lb protein of choice, diced
- 1 large red onion, diced
- 2 jalapenos, diced
- 3 tbsp sweet chili sauce
- 1 tbsp lime juice
- 1 tsp sugar
- 1 1/2 tbsp fish sauce
- Thai basil
- 1 carrot, shredded
- 1 head iceberg lettuce
- crushed peanuts, for garnish
Instructions
- Heat oil in a large wok until the oil begins to smoke.
- Add protein, if desired, and sauté until almost done.
- Add the red onion and jalapenos and sauté them for 2-3 minutes.
- Add the sweet chili sauce, lime juice, sugar, Thai basil, fish sauce and shredded carrots. Cook for about another 2 minutes.
- Serve alongside the lettuce cups and garnish with the crushed peanuts.
